Ingredients
  

  • 2 ripe avocados mashed
  • 4 hard-boiled eggs chopped
  • ΒΌ cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh chives chopped
  • Salt and pepper to taste
  • 8 slices whole grain bread
  • Lettuce leaves optional

Instructions
 

  • In a medium bowl, combine mashed avocados, chopped hard-boiled eggs, Greek yogurt, Dijon mustard, lemon juice, and fresh chives.
  • Season with salt and pepper to taste.
  • Mix until all ingredients are well combined.
  • Toast the slices of whole grain bread if desired.
  • Spread the avocado egg mixture evenly onto 4 slices of bread.
  • Top with lettuce leaves if using.
  • Cover with the remaining slices of bread to make sandwiches.
  • Serve immediately or wrap and refrigerate for later.
