Avocado Egg Salad Sandwich

A simple and nutritious sandwich with mashed avocado, hard-boiled eggs, and Greek yogurt.

- 2 ripe avocados mashed
- 4 hard-boiled eggs chopped
- ΒΌ cup Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 2 tablespoons fresh chives chopped
- Salt and pepper to taste
- 8 slices whole grain bread
- Lettuce leaves optional
In a medium bowl, combine mashed avocados, chopped hard-boiled eggs, Greek yogurt, Dijon mustard, lemon juice, and fresh chives.
Season with salt and pepper to taste.
Mix until all ingredients are well combined.
Toast the slices of whole grain bread if desired.
Spread the avocado egg mixture evenly onto 4 slices of bread.
Top with lettuce leaves if using.
Cover with the remaining slices of bread to make sandwiches.
Serve immediately or wrap and refrigerate for later.
