Ingredients
  

For the Pudding

  • ½ cup chia seeds
  • 2 cups milk dairy or non-dairy
  • 2-3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

For Topping

  • fresh fruit e.g., berries, mango
  • nuts and seeds optional

Instructions
 

  • In a bowl, combine chia seeds, milk, honey or maple syrup, and vanilla extract.
  • Stir well to ensure the chia seeds are evenly distributed and not clumped together.
  • Cover the bowl and refrigerate for at least 4 hours or overnight, until the mixture thickens to a pudding-like consistency.
  • Stir the pudding once more before serving.
  • Serve chilled, topped with fresh fruit and optional nuts and seeds.

Notes

For a thicker pudding, add more chia seeds. For a thinner consistency, add more milk. Adjust sweetness to taste.
