- ¼ cup milk
- ½ cup shredded cheddar cheese
- ¼ cup chopped spinach
- ¼ cup chopped red bell pepper
- ¼ cup diced onion
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- 1 tablespoon olive oil
Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with olive oil.
In a medium-sized bowl, whisk together the eggs and milk until well combined.
Stir in the shredded cheddar cheese, chopped spinach, red bell pepper, and diced onion.
Season the mixture with salt, black pepper, and garlic powder.
Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 15-20 minutes, or until the omelet bites are set and lightly golden on top.
