Ingredients
  

  • 4 large eggs
  • ¼ cup milk
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped spinach
  • ¼ cup chopped red bell pepper
  • ¼ cup diced onion
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with olive oil.
  • In a medium-sized bowl, whisk together the eggs and milk until well combined.
  • Stir in the shredded cheddar cheese, chopped spinach, red bell pepper, and diced onion.
  • Season the mixture with salt, black pepper, and garlic powder.
  • Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake in the preheated oven for 15-20 minutes, or until the omelet bites are set and lightly golden on top.
  • Allow the omelet bites to cool slightly before removing them from the muffin tin.
  • Serve warm or at room temperature, perfect for a quick breakfast or snack.
