These lemon bars have a buttery shortbread base and a bright lemon filling. You bake the crust, add the lemon mixture, and bake again for a simple citrus dessert.

Ingredients
  

Shortbread Crust

  • 1 cup unsalted butter softened
  • ½ cup powdered sugar
  • 2 cups all-purpose flour

Lemon Filling

  • 4 large eggs
  • 2 cups granulated sugar
  • cup all-purpose flour
  • cup lemon juice freshly squeezed
  • powdered sugar for dusting

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • Cream the butter and powdered sugar until smooth. Mix in the flour until blended.
  • Press the dough into the baking dish.
  • Bake for 15 to 20 minutes or until firm and lightly golden.
  • Whisk the eggs, granulated sugar, flour, and lemon juice until smooth.
  • Pour the filling over the baked crust.
  • Bake for 20 minutes or until the filling is set.
  • Let the bars cool completely.
  • Dust with powdered sugar and cut into squares.

Notes

You can chill the bars before cutting for cleaner slices.
