Shortbread Crust

unsalted butter
softened

powdered sugar

Lemon Filling

large eggs

granulated sugar

lemon juice
freshly squeezed
powdered sugar

Instructions
Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
Cream the butter and powdered sugar until smooth. Mix in the flour until blended.
Press the dough into the baking dish.
Bake for 15 to 20 minutes or until firm and lightly golden.
Whisk the eggs, granulated sugar, flour, and lemon juice until smooth.
Pour the filling over the baked crust.
Bake for 20 minutes or until the filling is set.
Let the bars cool completely.
Dust with powdered sugar and cut into squares.
Notes
You can chill the bars before cutting for cleaner slices.
